• 2 eggs
• 2 tablespoons of sugar
• 2 tablespoons of flour
• 2 teaspoons of cocoa
• 1 can of sweetened condensed milk
• 250 ml of heavy cream
• Vanilla extract
• 50 g of Plazma Ground
• 2 egg whites
• 6 tablespoons of sugar
• 2 tablespoons of water
• Some lemon juice
In a medium sized bowl, gently mix together the condensed milk, heavy cream and vanilla extract, and then put the mixture in an ice cream machine. After 15 minutes, when the mixture starts thickening, add the Plazma Ground and continue beating for another 5 minutes. Line 4 big coffee cups with transparent foil and pour the prepared ice cream in them. Leave them in the fridge overnight so the ice cream settles down.
Heat the oven to 180ºC. Separate the egg whites for the crust from the yolks, and mix the flour with the cocoa. Whisk the egg whites into a firm foam and add the sugar, then one, by one, add the yolks. When everything has blended well together, using a baking spoon, fold in the flour and cocoa mixture.
Line a tin tray with baking paper and put the mixture for the cake crust in it. Put the crust in the oven, and bake for 15 minutes (do the toothpick test to make sure it’s well baked). Take the crust out of the oven, and leave it to cool to room temperature and then cut it into 4 circles that match the diameter of the cups that hold the ice cream. Take the cups out of the freezer, and cover the ice cream with the crust and return to the fridge for another 2 hours.
Place 5 tablespoons of sugar, lemon juice and water in a pan, cook over low heat until it turns into a syrup. Make sure you don’t overcook it by letting it turn into a thick caramel.
Whisk the egg whites into a firm foam, add a tablespoon of sugar and continue beating. Then add the hot syrup and beat for a couple more minutes- until the egg whites become “shiny and thick”.
Take the cups out of the freezer, flip them on saucers, take the transparent foil off and generously coat the ice cream with the whisked egg whites. Using a cooking torch, slightly “scorch” the egg whites and serve immediately with raspberries or other type of berries.
