• 125 g of butter
• 70 g of sugar
• 1 egg yolk
• 1 teaspoon of vanilla extract
• 100 g of flour
• 60 g of Plazma Ground
• ½ teaspoon of baking powder
• Jam for the filling (your choice of flavor)
In a medium- sized bowl, whisk the butter and sugar into a foam. Add the egg yolk and vanilla extract and beat it until it all blends together nicely.
In a separate bowl, mix the flour, Plazma Ground and baking powder. Gently add the mixed dry ingredients to the whisked butter and blend together. Cover the resulting dough with transparent foil and leave in the fridge for an hour.
Heat the oven to 180ºC. Line a tray with baking paper. Take the dough out of the fridge and make small balls, 2 cm in diameter. Arrange the balls on the tray, leaving 3 cm of space between two balls. Press every bowl in the middle with your thumb, so you create a crater in which you will later pour the jam. Put the tray in the oven for 12 – 15 minutes, that is, until the cookies get a golden color.
Take the cookies out of the oven, leave them to cool completely and then put ½ a teaspoon of jam into each hole.
